Chakchouka means mixture.

Following are the ingredients for 8 persons:

8 fresh tomatoes

4 green sweet peppers

4 red sweet peppers

4 small zucchini

2 eggplants

4 onions

a few green chilies, red and/or yellow (strong or sweet according to your taste)

a few black or green olives

8 eggs

1 cup olive oil

1 teaspoon of Ras el hanout

salt, pepper to taste


-Heat up the oil in a large pot or a large ovenproof pan

-Mix the sliced ​​onions, ​​zucchini cut into rings, eggplants into cubes and the olives and salt and pepper then cook for 10 minutes.

-Add previously peeled, seeded and chopped tomatoes and the Ras -el hanout. Cook for 5 more minutes

-Incorporate all peppers, seeded and cut into strips, except for the chilies that must not be minced.

– Add a glass of water and cook for 10 minutes.

– Break the eggs gently into the mixture spacing them sufficiently so that whites have enough place to cook separately and become “medium boiled”.

– Allow 1 minute on the fire and serve with a nice portion of bread
