Maple syrup green beans salad
For 4 people
Preparation: 15 minutes Cooking time: 7 minutes
320 gr of green beans, 1/2 bag of salad baby sprouts, half bag of germinated alfafa sprouts, a shallot, sea salt to taste
For the dressing:
2 tablespoons of sherry vinegar, 2 tablespoons of colza oil, 2 tablespoons of maple syrup, fine salt
Cut both ends of the green beans. Cook them for 7 minutes in salted boiling water. Drain them and plunge them immediately into a bowl with ice.
Peel and finely chop the shallot.
Prepare the dressing, mix it with the green beans and add the shallot, the germinated sprouts and the salad. Serve immediately.
Tip: try to maintain the green colour of the green beans: cook without covering them and once they are ready, plunge them into chilly water.
