Chicken tagine with olives, candied lemons and olive oil, concocted by Maajouba (Housekeeper Villa Roma)


Preparation: 15 minutes

Cooking time: 30 to 45 minutes

Ingredients (4 people):

– 1 big free range chicken (Bildi chicken) cut into pieces (or 4 beautiful pieces of chicken)

– 2 large onions

– 5 cloves of garlic

– 2 candied lemons

– 1 lemon

– 1 teaspoon of ground ginger

– 1 teaspoon of turmeric

– 1 teaspoon of ground cumin

– 400 gr of pitted green olives

– 4 tablespoons of fresh coriander

– 3 tablespoons of olive oil

– 20 cl of water

– salt and pepper to taste


Preparation :

For this recipe a tajine dish is required.

Fry the sliced onions and garlic cloves in medium heat olive oil.

Salt and pepper the chicken, add it to the onions and garlic and let it cook for 5-10 minutes, turning several times.

Add spices, lemon juice, a glass of water and the remaining 3 cloves of garlic.

Cover the tajine and cook over medium heat for 30 minutes.

Add olives, candied lemons cut into 4 pieces and fresh coriander.

Cook another 10 to 15 minutes on a very low heat.
